Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer was tested at between 0 and 150 ppm quats for three buckets and one spray bottle.
Corrective Action(s): Sanitizer buckets and bottle were emptied and refilled at the dispenser. Sanitizer was tested at 200 ppm quats. Ensure that sanitizer is changed as often as needed to maintain concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Verify with quats test strips available on site.

Observation (CORRECTED DURING INSPECTION): Two hand sinks located in front area were supplied with foaming hand soap refill containers. Refills were not placed into a dispenser as no soap dispensers were available at these two hand sinks. Limited soap was available from refill containers as refill containers were placed on their sides directly on the counter.
Corrective Action(s): If foaming hand soap refills are to be used, ensure that appropriate wall mounted soap dispensers are in place at the above-noted hand sinks. Foaming hand soap refills are not intended to be used outside of soap dispensers. Small "stand alone" hand soap pumps were placed temporarily at the above-noted hand sinks to ensure an adequate supply of hand soap.

- Freezer at -17 degrees C
- Hot holding internal food temperatures at 60 degrees C or more
- Prepared or portioned food items are covered and dated
- Thermometers available for cold holding units
- Utensils/equipment in sanitary condition
- High temperature dishwasher measured 72 degrees C at the utensil surface (minimum 71 degrees C at the utensil surface)
- Quaternary ammonium compounds (quats) sanitizer measured at 200 ppm from dispensing unit at three compartment sink. Test strips on site.
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Staff wear clean clothing and hair is secured in hair nets with hats
- No signs of pest activity observed at time of inspection.
- Daily temperature logs are maintained
