o Hand wash stations are fully supplied with liquid soap, hot and cold water and paper towels in dispensers
o Hand washing was observed during the inspection
o Operators had clean clothing for food preparation and service
-Washrooms are fully supplied for hand hygiene and appear clean, for customers and staff

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are on the stove at room temperature and reheated when needed. Ensure this is monitored and used up within 2hrs of lunch service.

Food Processing and Food Protection
o Cooling - Temperatures are being monitored
o Food Storage - Food is stored in covered containers or in original packaging
-Raw meats are stored on the lowest shelf
-Coolers are organized to prevent cross contamination

-Features imported items that are shelf stable
-Canned items appear to be undented and in good condition

Maintenance and Sanitation
o 3 Compartment Sink is supplied with 200ppm Quats for sanitizing large items
o Dishwasher - Final rinse temperature is >71C at the plate surface (76.2C measured)
o Sanitizer bottles/buckets - have 100ppm Chlorine
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-A few items such as coolers and freezers are not being used and are turned off - these items appear clean on the inside, thank you.
o Pest control - there are no signs of pests at the time of inspection.
