Dishwasher final disinfecting rinse above 71 Celsius. Hot Held soup kept above 60 Celsius. Sanitizer available for use at +100 ppm Chlorine. Freezer at -12 Celsius, possible defrost cycle unit to be at -18 Celsius, products frozen solid. Hand washing station maintained.
