Found raw fish in various containers stored above cooked foods or raw vegetables
Corrective Action(s): Keep food containers covered with tight fitting lids, or food grade wrapping to protect from contamination.
Have raw proteins stored below and away from other food products. Designate one area for raw meat products in your walk in cooler

Observation: Walk in freezer had been manually turned off to defrost system. Temperature measured at -2C to 0C
Corrective Action(s): Frozen products must be moved from walk in freezer if temperatures increase to 4C. This will happen very shortly given the condenser is completely turned off. As discussed, move products to your available coolers while staff clean away ice/water.
