- Temperature Control: Monitoring is required to be conducted. Probe style temperature gauge is on site - to be utilized for internal monitoring of cooked food items.
- Mechanical Dishwasher: High Temperature - ok.
- Wiping cloth storage discussed. Keep bucket labelled. Quats - - Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Ok.
- Sanitary Facilities: Handsink is to be kept free of obstructions.
- Chemical Storage: Ok.
- Sanitation: Store all items in designated areas. (ie: Chemicals vs Food)
- Structurally: Ok.
