Food Safe - see above. If operator is absent, at least one person per shift must have a valid (<5 year old) certificate.
Food Safety and Sanitation plans are on site. Posters provided.
No hot holding today. Coolers are at 4 C or colder.
Raw oysters - Operator is aware of recall/warning (oysters were removed). Information was provided by supplier. Oysters on display are covered in ice.
Raw oyster warning is on menu - good.
Live crustacean tank - crabs and lobsters - previously provided information. Water is clear.
Steak in walk in cooler - Operator will be using dry disposable cheesecloth to cover steak. Cloth is discarded after use. Keep steak protected from contamination.
Quats sanitizer - for wiping cloth storage - is at 200ppm - good.
Commercial dishwasher - has a chlorine 50ppm final sanitizing rinse - good.
Premises has been cleaned and food preparation/food storage area has been painted. *Seal the wall behind the spray sink in the dishwashing area.
