Routine inspection conducted and the following were noted at the time of inspection.
All cooler units were 4C or less.
Walk-in freezer at -14C. Ensure unit is capable of keeping food less than or equal to -18C.
All hot foods were stored at 60C or above.
High temperature dishwasher achieved a final rinse temperature of 71C at plate level. Staff member usually verifies sanitizing temperature by looking a the gauge. A more accurate method would be to use a memory waterproof thermometer to ensure a temperature of 71C or high is achieved at plate level.
General sanitation was satisfactory.
No pest activity noted.
Quats sanitizer dispenser at 200ppm. All wiping rags were stored in a sanitizing solution. Sanitizing solutions were being changed at the beginning of the inspection.
Ice machine was clean.
All food items stored at least 6 inches off the ground and properly covered.
Hand washing stations satisfactory.
