Observation (CORRECTED DURING INSPECTION): Apple Green Powder IH 8925 was found in the kitchen - for external use only.
Corrective Action(s): Apple Green Powder does not appear to be a food grade material and may be hazardous for human consumption. Only foods which are intended for human consumption can be used in the facility. Operator discarded the food colouring at the time of inspection.

203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Container of cooked spinach was at 13C. Sauce was made the previous night.
Corrective Action(s): Cooked potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and/or the formation of toxins. Sauce was discarded at the time of inspection. To rapidly cool sauces, sauces can be placed in the freezer, ice mixing wands can be used, or sauces can be cooled in an ice water bath in shallow containers.

Observation (CORRECTED DURING INSPECTION): No bleach sanitizer was available in the kitchen.
Corrective Action(s): While in operator, bleach at 100ppm to 200ppm must be available to sanitize food contact surfaces. Bleach at 200ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Operator observed moving garbage can and did not wash hands prior to handling food.
Corrective Action(s): All food handlers must adhere to good hand hygiene practices to prevent potential contamination of foods. Review hand hygiene practices with all food handlers.

Observation (CORRECTED DURING INSPECTION): Used plastic zipper seal bags were stored in the wash area.
Corrective Action(s): Zipper seal bags can only be used once and must be discarded. Plastic bags cannot be properly cleaned and sanitized. Bags were discarded at the time of inspection.

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 3C.
-Chest freezers (kitchen) were at -16C to -21C.
-Front area chest freezer was at -15C.
-Storage area freezer was at -13C.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap and single use paper towels.
-Sweets by the cash register area covered and protected from potential contamination.
-General sanitation satisfactory.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-Some rodent droppings are still observed in the kitchen storage area. Continue to employ pest control services to prevent further infestation.
-FOODSAFE Level 1 equivalence valid until August 08, 2028
