Observation: Exhaust canopy observed with grease build up. This is a REPEAT VIOLATION noted in report on Sept 26, 2023. Manager stated on Sept 26 that the canopy would be cleaned weekly to prevent the build up /accumulation of grease so that the grease does not drip onto the cooking surface/food below.
Floor surfaces below back room shelving and flooring below back room upright freezers observed with substantial food spillage/debris build up
Corrective Action(s): Clean interior of exhaust canopy. Set up weekly cleaning schedule

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Stoppers missing for 2 of the 3 sinks at the 3 compartment sink. This is a REPEAT VIOLATION as noted in report on Sept 26, 2023.
One bowl removed to be discarded to to being badly cracked. This is a REPEAT VIOLATION as noted in report on Sept 26, 2023. On Sept 26 Manager stated new bowls have been purchased
Several bowls observed with substantial staining.
Corrective Action(s): As stated in my previous report on Sept 26, 2023 "Purchase stoppers as a back up in the event of a failure of the dishwasher so that a 3 compartment manual warewash can be done"
Replace all damaged/chipped bowls. As per my report on Sept 26 "Ensure staff are checking utensils daily for potential damage and immediately discarding damaged utensils"
Recommend soaking all bowls in a dilute bleach solution ie 200 ppm to remove staining to the interior of the bowls
