Observation: Accumulation of cardboard was observed on the floor in the walk-in freezer.
Corrective Action(s): Remove the cardboard to ensure surfaces are clean, smmoth, and non-absorbent. To be corrected today.

Comments

Routine Inspection:
-Handwashing station equipped with hot/cold water, paper towels, liquid soap.

Temperatures:
-Walk-in fridge was 3.2°C ambient, during inspection
-Walk-in freezer was -19.1°C ambient, during inspection
-Prep fridge was at 2.3°C ambient and probed tomatoes 3.0°C
-Prep freezer was below -18°C, ambient probe -20.3°C
-Beverage fridge #1 & 2 were at 5.6°C and 4.2°C (no PHFs)
-Hot holding was above 60°C, probed chicken was recorded at 69°C
-Line drawer fridge was at 3.3°C during inspection
-Thermometers were present in all coolers/freezers.

Sanitation & Maintenance:
-Chemical dishwasher had Chlorine on plate residue at 100ppm
-Sanitizer available in bottles is approved (Quats) and measure at 200ppm
-Food products were stored 6-inches above the ground
-General sanitation and cleanliness adequate
-Ventilation hood in good order, next service Oct/2024.

Administrative:
-FoodSafe Level 1 or equivalent was available during inspection
-Temperature logs are maintained and in-good-order
-Permit is conspicuously posted with an up-to-date decal
-Pest control records were available and maintained.

*Ensure sauces requiring refrigeration are not held longer than 2hrs at room temperature. Room temperature holding was discussed with operator.
