Comments

- All handsinks in kitchen, sushi bar and washroom are supplied with hot and cold running water, soap and paper towel
- Sushi under counter cooler, sushi raw fish cooler, undercounter cooler in kitchen and upright coolers are less than 4C
- Freezers (two upright and one chest) are functional and measured at less than -18C
- Cold holding units equipped with accurate thermometers
- Hot holding rice and miso soup are greater than 60C. Teriyaki sauce is stored in crock pot with hot water, held at greater than 60C
- High temperature dishwasher measured 78C at dish surface during final rinse cycle
- Sanitizer solution is available in spray bottles, measured at 200ppm chlorine residual
- Food storage practices are satisfactory
- No evidence of pest activity at time of inspection
- Foodsafe requirement is met at the time of inspection
- General sanitation is satisfactory
