205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Shrimps were noted in the prep/ dough cooler at 7.5C - unit closest to the walk-in cooler.
2. 3 (4L) containers of sour cream and some individual portioned sour cream were noted with an internal temperature of 12.4C. Server cooler noted with an internal temperature of 10.5C.
Corrective Action(s): 1. As per staff, this cooler's temperature is kept at around 5 - 7C for the pizza dough.
Pizza dough with no toppings are not considered cold potentially hazardous items, so keeping the refrigeration units slightly elevated for the dough is not a concern. However, if this is the case, do not store other cold potentially hazardous food in this unit as all cold potentially hazardous food MUST be kept at 4.0C or below. All other food in this unit (small amount of shredded pork, pepperoni, cheese, sliced tomatoes) were moved to another functioning cooler at the time of inspection.
2. All the sour cream in the server cooler was discarded at the time of inspection.

Observation: 1. Food in the walk-in freezer and reach-in freezer by the dishwashing area were stored uncovered/ unprotected.
2. Ice scoop stored inside the ice machine with the handle in contact of the ice.
Corrective Action(s): 1. Place lids/ plastic wraps over the food in the freezers or anything that is not currently being used for service.
2. Take out the ice scoop and either store in a separate clean container or store in a manner where the handle does not come into into contact with ice.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulated debris and grease buildup noted in the following areas:
1. Heavy grease buildup and food soil noted on the floor below the cooking equipment along the cookline.
2. Floor below the shelves in the walk-in cooler.
3. Floor around the stand mixer (by the walk-in units).
4. Heavy grease buildup noted on the wall below the dirty side of the dishwashing area - below the work table.
5. Organic black buildup noted in the interior (inside ceiling) of the prep cooler closest to the walk-in units (beside stand mixer).
6. Debris noted on the floor in the server area.
7. Debris noted on the floor in the bar area.
8. Organic buildup noted in the soda gun holder in the bar area.
Corrective Action(s): Heavy deep cleaning and sanitation is required in the abovementioned areas. After deep clean, please maintain cleanliness as per Sanitation schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Dishwashing was not being completed at the time of inspection. However, < 10 PPM chlorine residual was detected from the low temperature dish washer when tested.
2. Server cooler noted with an internal temperature of 10.5C.
Corrective Action(s): 1. **Issue corrected at the time of inspection** Staff adjusted the machine and 100 PPM chlorine residual was noted at plate level after washing/ rinsing. Staff has access to chlorine test strips and were able to verify for the correct concentration.
2. All cold potentially hazardous food in the server cooler was discarded. Server cooler was emptied. Anything not potentially hazardous was moved into another cooler unit. Technician called to service machine. Ensure it must reach 4.0C or below before storing any cold potentially hazardous food.

Observation: Rust/ buildup noted in the interior (shelves) of the bar reach-in cooler.
Corrective Action(s): Clean the bar reach-in cooler and place proper non-water soluble liners that are easy to clean and sanitize over the shelves. Alternatively, replace unit.

Routine inspection conducted today:
Handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All paper towel rolls (server area and women's washroom) must be loaded into paper towel dispensers or protected to avoid contaminating hands after washing.
Refrigeration units were at 4.0C or below (except one of the prep coolers noted in violation above)
Freezer units were holding food at -18.0C or below.
Hot hold units were holding hot food above 60.0C.
No improper dispensers were used or stored within bulk food containers.
2 sanitizer containers were set-up. 200 PPM chlorine residual was detected in the containers.
Bar dish machine was noted with 12.5 PPM iodine residual.
No signs of pest activities noted during the inspection.
