The operator indicated that it has been there for approx.1hr - 1.5hrs.
Cold potentially hazardous food must be stored at 4C or below to minimize growth of foodborne illness causing microbes
Corrective Action: Store the marinated eggs in a cooler when not in-use. Keep the prep coolers closed to ensure that temperature does not exceed 4C when not in-use

Observation: Observation: Minor accumulation of food debris (rice, flour, sugar,etc) observed underneath dry goods in dry storage area. Food debris may attract pests and contaminate other food items.

Following temperatures were measured.:
Walk-in cooler = 1C-3C
Walk in freezer = -22C
Line coolers = 3C - 4C
Hot holding units = 78C - 84C
Rice holding unit = 66C
Thermometers present in all coolers and freezers
Handsink equipped with liquid soap, paper towels ,and hot and cold running water.
High temperature dishwasher measured 74.2C at plate surface
3 compartment sink available and in use
Chlorine spray bottle for food contact surfaces measured at 100ppm
No signs of pests
Chopsticks used for tempura batter stored in clean ice water
Meat slicer not being used at the time of inspection
General sanitation satisfactory except for dry storage area
