Observation (CORRECTED DURING INSPECTION): Accumulation of dust observed on the magnetic knife holder.
Corrective Action(s): Clean and sanitize the magnetic knife holder and all five knives stored on the holder. Ensure knife holder is cleaned and sanitized at least weekly.

Observation (CORRECTED DURING INSPECTION): Food surface sanitizer not available at the kitchen area.
Corrective Action(s): Staff prepared 200 ppm bleach sanitizer in a bucket. Ensure food surface sanitizer is always available during operation.

Corrective Action(s): Clean the aforementioned area. Follow your sanitation plan for regular cleaning schedule. Correct by: Feb 23, 2020.

Corrective Action(s): Garbage bag is not made from food safe material and must not be used to store or cover food. Transfer the fish into a food grade bag immediately.
