Observation: Table mounted commerical can opener blade was not in sanitary condition upon inspection.
Corrective Action(s): Clean and sanitize the following above item. Ensure equipment being used is properly cleaned and sanitized before use.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: One soap dispenser at hand washing station was broken and unavailable. The other hand washing station had a dispenser but the pump was also dislodged. Spare soap dispenser was on site but not not yet installed.
Corrective Action(s): Replace both soap dispensers to be in proper working order. Ensure all hand washing stations are supplied with hot/cold running water, liquid hand soap, and single use paper towels at all times.

Observation: 1. Raw marinated chicken on spit was left uncovered in the walk-in cooler unit.
2. Bucket of bagged dry spices was stored underneath rack of chemicals. Operator corrected and moved the bucket during the inspection.
Corrective Action(s): 1.Supply a form of food grade cover to protect from contamination. Ensure all food items in coolers are covered.
2. Ensure food items are not stored nearby chemicals where it can lead to potential contamination.

Observation: One deep chest freezer door cover was separating when being opened.
Corrective Action(s): Replace or repair the deep freezer door cover so it is not separating when being opened.

Observation: 1. Drop ceiling tiles from in the back are peeling.
2. Caulk sillicone sealant by the 3-compartment sink has accumulation of black growth.
3. Small deep dryer unit was being used in the back where there is no proper ventilation.
Corrective Action(s): 1. Replace peeling drop ceiling tiles so that they are in good repair.
2. Remove all the contaminated sealant and re-caulk and seal all corner and water ingress points.
3. Do not use small deep fryer unit in area's where there isnt proper ventilation. Reposition small deep dryer undernearth the ventilation if it is to be used.

• Walk-in cooler measured at 4 degrees C or less.
• Prep coolers and under counter coolers measured at 4 degrees C or less.
• Hot-holding units measured greater than 60 degrees C.
• Chest freezer units measured at -18 degrees C or lower.
• Secondary cook-step observed to being followed.
• Hand sinks supplied with hot/cold running water, and single use paper towels. Soap dispensers require attention. Please see code 401.
• 3-compartment sink available for manual ware washing. Drain plugs were available.
• Sanitizer measured at 100ppm chlorine from spray bottle.
• General sanitation is adequate.
• No signs of pests at time of inspection.
• Licensed pest control services in place.
• FOODSAFE level 1 or equivalent requirement met.
