Observation: The ice well basin (no direct contact with the ice) in the bar area is rotting.
Corrective Action(s): Repair water leaks and ensure that all surfaces are impervious to moisture and easy to clean.
Improve cleaning in the bar area (under counter, etc.).

Routine check:
Coolers are at 4 C or colder.
Gravy and "Au jus" are 60 C or hotter.
Reviewed cooling procedures (use ice water bath).
Hand washing stations in the main kitchen and bar area have liquid soap and paper towels.
Dishwasher has a chlorine sanitizing rinse.
Quats sanitizer is in spray bottle. Use on food contact surfaces after they are washed and rinsed. Spray and let air dry. Do this every 2 hours.
Potato chipper is being cleaned during inspection.
