Observation: Bleach was too strong and resulted in test strip bleaching out.
Corrective Action(s): Bleach must be maintained at 100ppm to 200ppm to prevent potential contamination of food and food contact surfaces. Excessive concentration of bleach may be toxic. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon of bleach to 1 litre of water. Bleach was prepared at 200ppm at the time of inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were still observed in the dry storage area. Facility has been serviced by a professional pest control operator.
Corrective Action(s): Clean all rodent droppings and sanitize affected areas using a strong bleach solution (1:10). Continue to monitor for pest activity and contact pest control services as needed.

Observation: Bleach sanitizer pail was unlabelled.
Corrective Action(s): Ensure all containers are properly labelled to identify their contents to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as needed.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Operator was not present at the time of inspection and no other staff had FOODSAFE Level 1 or equivalent training.
Corrective Action(s): In the absence of the operator, at least one employee must have FOODSAFE Level 1 or equivalent training. Additional staff will need to obtain FOODSAFE Level 1 or equivalent training or the operator cannot leave the facility.

Comments

-Follow-up inspection to December 7, 2021.
-Handwash station was operational and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Raw meats were properly stored below or separately from ready-to-eat foods.
-Foods in the walk-in cooler, which are not used continuously were properly covered.
-Did not observe foods stored in opened cans.
-Did not observe foods cooling on the floor at the time of inspection.
-Scoops were generally found to be stored in a sanitary manner. One scoop was found stored inside the container improperly. Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.
