Observation (CORRECTED DURING INSPECTION): Observation: Bleach sanitizer at front in spray bottle measured at 0ppm chlorine concentration.
Health rationale: Without adequate sanitizer, food contact surfaces not maintained in a sanitary condition which can introduce pathogens to foods and cause foodborne illness.
Corrective action: (corrected during inspection) replace bottle with new bleach solution. Bleach concentration measured at 200ppm chlorine after replaced by the operator.
Observation: Dishwasher at 0ppm concentration of chlorine at plate surface.
health rationale: dishware is not being adequately sanitized to remove pathogens - risk of foodborne illness.
Corrective action: Replace bleach pail with a new bleach pail to ensure concentration is at least 50ppm chlorine at plate surface. Clean and sanitize all dishes and cutlery in dishwasher.

Observation (CORRECTED DURING INSPECTION): Observation 1): Food found uncovered in prep cooler in front at cooking units. Raw meat placed above ready-to-eat items (uncovered).
Health rationale: Meats can potentially contaminate ready to eat foods and can cause foodborne illness if not covered and stored separately.
Corrective action: Cover all items in the cooler and ensure raw foods are stored separately from ready-to-eat foods to reduce risk of cross-contamination.
Observation 2): Can of opened tomato paste found in prep cooler in front of cooking unit.
Health rationale: Opened cans of food can potentially cause chemical leaching into food and/or physical contamination of rust into the food.
Corrective action: Remove foods in opened cans and store in a foodgrade material to reduce risk of chemical leaching into the food.

Observation: Observation: Rodent droppings found around back storage area (in corners and along walls).
Health rationale: Rodents are carriers of disease and can potentially contaminate foods.
Corrective action: Remove all rodent droppings using person protective equipment (gloves, mask) spray rodent droppings with a disinfectant mixture of bleach (1 part bleach to 10 parts water) and water and let soak for 5 minutes. Use paper towel to pick up droppings disinfect area with bleach. Ensure pest management company is contacted and inspecting monthly as per contract.

Observed during inspection:
1) Temperatures:
-Operator practicing proper cooling & thawing techniques using ice wands.
-Walk-in cooler at 2C
-Walk-in freezer at -18C
-Prep cooler at 4C
-Display cooler at front at 4C

2) Sanitation:
-General sanitation satisfactory - ensure all hard to reach areas are deep-cleaned.
-handwashing station at back kitchen area and at front service adequately supplied with hot and cold water, soap and paper towel.
-all food is stored at least 6 inches off the ground in storage area.
-Cold storage well organized.

3) Pests:
-Observation of some pest droppings.
-Operator mentioned that pest management company is contracted and conducting monthly inspections.
-Ensure company is notified if pest issue gets worse and/or does not get resolved.

4) Admin:
-Foodsafe Level 1 trained employee on premises (expires Aug 7, 2021)
-Operating permit visible
