302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Noticed lack of proper sanitizer in the kitchen, back and front store. Only one bucket with chlorine-water solution (about 10ppm chlorine residue) observed on the front counter. Use of proper cleaning and sanitizing food contact surfaces and other high touch surfaces discussed. Operator provided bleach water solution in buckets.
Corrective Action(s): Ensure sanitizer is available in different part of the kitchen for ease of use. Ensure wiping cloths are kept in sanitizer and bleach waster solution is changed frequently to ensure effectiveness.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand washing sink in front lacked paper towels. Staff observed using bulk napkins stacked on the serving table. This is not an acceptable practice. Note: Using stacked napkins on the table is not acceptable to dry hands as napkins get contaminated by wet hands.
Corrective Action(s): Provide paper towel in dispenser. Ensure paper towel dispensers are stocked at operating hours.

Observation: Limited number of mice droppings noted in dry storage underneath shelve. Pest control company has been hired and sticky traps, live traps noticed throughout the facility.
Corrective Action(s): Clean and sanitize affected areas. Monitor mice activity and take action as needed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1- Noticed cracked and separeted caulking around hand sinks. Sinks are to be sealed to their respective mounting place in order to be easily cleanable and prevent water drip to lower sections.
2- A hole was noted on the wall behind the gas range in the kitchen. This provide possible entry for pest.
Corrective Action(s): 1- Re-caulk the premeters of sinks and ensure it is sealed.
2- Patch all holes and ensure no easy acces to the kitchen for pest.

Routine inspection

Hand washing station in the kitchen supplied with hot/cold running water, liquid soap and paper towels. See violation notes.
- Food in Walk-in cooler measured at 4C or colder. Food is to be covered and protected from possible contamination.
- All coolers measured at or below 4C. Ensure coolers are equipped with accurate thermometer. Temperature for all cooling units is to be measured twice daily and recorded. keep the records updated and on-site for review.
- Freezers measured at -18C or colder. Ensure to defrost chest freezer at the back, clean and sanitize the compartments.
- Hot holding units measured at or above 60C. Ensure to check and monitor the units temperature daily.

- General sanitation is to be improved. Surfaces are to be wiped clean and sanitized
- Pest control company managing and monitoring pest issue.
