- Under bar sinks.
- Under equipment and inside cabinets under coffee machine at coffee bar.
- Under cooking equipment along main cook line and around cambro hot boxes.
- Inside downstairs dry storage room.
Corrective Action(s): - Remove droppings and thoroughly clean above-listed areas. Use 100-200 ppm chlorine bleach solution (1 tsp chlorine bleach + 1 L water) on affected areas.
- Report activity to your pest control company. Follow all recommendations.
- Ensure all areas are accessible for pest control service.

2. Seal hole and replace missing tile under 2-compartment sink/ bar dishwasher area.

- Handsinks are accessible and supplied with hot and cold water, liquid soap and papertowels (unless otherwise mentioned).
- High Temperature Sanitizing Dishwasher: 71.1C at plate surface. Ensure that Minimum Wash and Final Rinse temperatures are achieved per unit data plate BEFORE using.
- Low Temperature Chemical Sanitizing Dishwasher: 50 ppm chlorine residual. Test strips available to verify concentration.
- EcoLab Sink and Surface Cleaner Sanitizer: 0.27 to 0.55 ounces/ gallon. Test strips available to verify concentration range Dodecylbenzene Sulfonic Acid + Lactic Acid).
