Observation (CORRECTED DURING INSPECTION): Two quat spray bottles had approximately 50 ppm quats. One sanitizing pail behind front service counter had 0 ppm chlorine.
Corrective action: Both spray bottles were emptied and refilled with quats form eh dispenser and had 200 ppm quats residual. The sanitizing pail was emptied and refilled with bleach solution -it contained 200ppm chlorine residual.

Observation: Multiple areas of restaurant were unsanitary:
1)Area between deep frying machines have a substantial amount of spilled grease.

Comments:
-All coolers at 4C or below
-All freezers at -18C or below.
-Dishwasher (low temp) contained 50 ppm chlorine residual at the final rinse cycle at the plate.
-Handwash sinks equipped with hot/cold running water, liquid soap, and paper towels.
-Ice scoops store din separate holder away from ice. Reminder: Clean the holder every 4 hours and sanitize.
-General sanitation of restaurant is satisfactory (except for items mentioned above)
-Employee hygiene is satisfactory. Employees observed handwashing throughout inspection.
-Past 3 pest reports by EcoLab report no signs of rodent or pest activity. Inspector did not see any signs of recent pest activity on premises. Fly traps and mechanical flour traps observed in use.
-Items in cooling wells are time controlled and discarded either after 2 or 4 hours depending on the food.
-Back receiving area is clean and uncluttered.
-Employee washrooms were sanitary and equipped with handsinks with hot/cold running water, paper towels, and liquid soap.

Recommendations:
-Although utensils are snapped out every 2 hours, ensure that the holders/slots are also cleaned and sanitized. A small amount of debris was observed inside.
-Have plumber address, show flow rate in women's washroom. Reminder that all washrooms should have hot/cold running water, liquid soap, and paper towels.

Maintenance of areas behind and between equipment allows the premise to be kept in sanitary condition.
