Observation (CORRECTED DURING INSPECTION): High temperature dishwasher had 67.1'C at the plate level after final rinse. Staff had advised the dishwasher has been in use constantly since this morning. Operator arrived in the middle of the inspection and changed the setting of the dishwasher. 78.2'C was achieved at the plate level after final rinse. All dishware to be rewashed/sanitized at this time.
Corrective Action(s): Ensure the minimum temperature is reached for every cycle- 65'C for wash/82'C for rinse at the manifold. All staff must be trained regarding the proper use of the dishwasher.

Observation: Dishwasher temperature screen requires a repair. The current temperature readings are not accurate- 62'C for TNK/91'C BST.

Comments

Routine inspection conducted:

-Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
NOTE: Front display cooler not in use at this time, as facility is closed for business on Mon/Tues. Kitchen is still in full operation.
-Thermometers available for temperature monitoring.
-General food storage practice satisfactory. Scoops stored in some bulk bins had handles not in contact with food.
-200ppm chlorine solution available in a bucket in the 2 comp sink.
NOTE: Ensure all kitchen staff are aware of the sanitizer. All prep surfaces must be sanitized every morning, after each possible contamination and every 2 hours during operation.
-Washroom handsink satisfactory.
-Traps in place. No evidence of pest activity observed at this time.
-Professional pest control company contracted for monthly visits. Abell.

NOTE: Prep table placed by the dishwasher to be lined, so that the surface is smooth, non-porous and easy to clean. No food products are stored on this unit.
