Observation: The permit to operate was issued to the Legal Owner of this restaurant with floor plans that involved a 2-compartment sink and high temperature dishwasher being in good working order. Dishwasher was not repaired and was still not in good working order.
Corrective Action(s): 1. Repair the high temperature dishwasher so that it is in good working order and achieves the sanitizing standard (dishwasher final rinse temperature of 71 degrees C or hotter at the plate), or replace the dishwasher with a commercial dishwasher that is able to maintain the sanitizing standard (dishwasher final rinse temperature of 71 degrees C or hotter for high temperature dishwashers or minimal of 50 ppm chlorine sanitizer residual at the plate after the dishwasher final rinse for low temperature dishwashers). Correct by February 22, 2019 by 5 PM.
2. Alternatively, remove the dishwasher and have a commercial 3-compartment sink installed with drain boards attached on both sides and each sink being large enough to fully immerse the largest utensil/equipment through it for washing, rinsing, and sanitizing; Correct by February 22, 2019. Install a larger air drying shelving unit above the ware-washing sink that is washable, impermeable to moisture, non-toxic, smooth, and durable; Correct by February 22, 2019. Provide a specification sheet to the district Environmental Health Officer of Fraser Health for review and health approval prior to installing the 3-compartment sink and by February 19, 2019.
3. Ensure all food contact surfaces are manually washed, rinsed, sanitized, and air dried using the 2-compartment sink unit for the time being; Correct immediately. Only use and provided single-service utensils; Correct immediately.
4. Contact the district Environmental Health Office of Fraser Health for a follow up inspection.

Follow up inspection:
-A specification sheet has not been provided yet for the 3-compartment sink unit that will be installed.
-Operator and Operator's son stated over phone during the inspection that they have purchased a 3-compartment sink unit and it is scheduled be installed by February 22, 2019 and they intend to remove the dishwasher that is not in good working order.
-Code 303 is still outstanding on the routine inspection AHEN-B8XTAU.
-Public Health Act Correction ORDER was issued to the legal owner of this restaurant. Refer to the Public Health Act ORDER for details. Failure to comply may result in further enforcement action (e.g. issuance of violation ticket(s) to enforce this Public Health Act Correction ORDER.
