Observation: Dishwasher final rinse temperature drops regularly and requires redraining and filling to get to temperature.
Dishwasher dispenser is broken.
Corrective Action(s): Staff are aware of problem and are manually washing dishes and also following procedures to ensure it reaches required temperature until it can be fixed. Pleasse ensure breakfast program is also aware. Repairman hasd been called and is expected to service.

All freezers are -18 degrees C. or colder.
Liquid soap and paper towel at handsinks.
Dishwasher final rinse reached 73 degrees C. at the plate surface.
Bleach water in spray bottle measured 200 PPM chlorine residual.
Ensure that temperature logs are being carried out daily.
Remove cloth drying mats. Bar mats would be acceptable.
Continue to handwash dishes until soap dishwasher soap can be replaced.
