Observation: A) Lights above dry storage racks still uncovered.
B) Noted a bottle of coka cola store in the ice machine
Corrective Action(s): A) Install a cover or sleeve over the lights in the dry storage area.
B) Do not store anything in the ice as it is a food item and all foods are to be protected from contamination

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Corner of the base of the wall in the entrance of the kitchen across from the hand sink was broken/extremely worn away.
Corrective Action(s): Repair/replace this part of the wall so that it is smooth, durable and washable.

Comments

- All handwash stations had soap, paper towel, hot and cold running water.
- All coolers 4C or less (sushi display, under counter, upright one door, sliding two door..etc)
- All freezers -10 to -16C (Ensure all frozen potentially hazardous foods are stored at -18C or less)
- All hot holding 60C or higher (rice and miso soup)
- Proper cooling procedures were taking place at time of inspection (chicken teriyaki and tempura spread out of large flat sheet, to be transferred to cooler unit within 2 hours)
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container.
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- No food items were stored in the hall and the public washroom doors were closed.
- Chlorine sanitizer 100ppm in container with cloths submerged
- High temperature dishwasher achieved 71C (with thermolabel).
- Pegnancy & alcohol warning signage provided (2). Post one in each public washroom.
- Reminded operator of foodsafe level 1 recertification requirements. Information pamphlet provided.
