Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Dough mixer, slicer, sieves, and various soiled preparation utensils were used yesterday, were being stored near the back area, and still require warewashing.
Correction: Wash, rinse, sanitize, and air dry the soiled/used food contact surfaces to maintain them in a clean condition. Review the cleaning schedule with staff so that they wash, rinse, sanitize, and air dry food contact surfaces immediately after each use and in-use utensils (slicers, dough mixers) every 4 hours between use, between raw meat and ready to eat food, and after final operation.

Person in charge instructed staff to ware-wash the equipment at the time of inspection. A follow up inspection will be conducted.
Comments

Follow up inspection:
-Sweets cooler was at or below 4 degrees C (2.2 degrees C in the middle shelf and 3.1 degrees C at the bottom shelf).
-Two thermometers were available inside this cooler.
-An extra cooler fan was added into the sweets cooler to improve the air circulation according to the Operator. Two fans were available inside the sweets cooler.
-Preparation utensils, equipment, and dough mixer that was previously soiled was in a clean condition at the time of inspection.
-Flowers and plants were being store on a separate side of the walk-in-cooler than the covered food and a temporary barrier was in place between them for the time being.
-Light bulb was removed from the ventilation hood as it lacked a shatterproof cover.
-A ceiling tile was re-aligned where it was previously not in place.
-Operator has registered into a FOODSAFE Level 1 course offered by Fraser Health at the Central City Tower.

The following still requires your attention:
1. Ensure the flowers and plants are stored completely separately from the food in a separate cooler; Correct within 1 month. Operator has agreed to obtain a separate cooler to store the additional flowers/plants or move them into a separate cooler that is not used for food storage. In the meanwhile, make sure the plans are stored on a completely separate side and separate shelving units away from the covered food products to protect food from contamination.
2. Re-install the light bulb in the ventilation area once the shatterproof cover is purchased for it. Re-install the shatterproof light covers over the light bulb in the walk-in-cooler and back prep. area.
3. Provide the district Environmental Health Officer a copy of your temporary FOODSAFE Level 1 temporary certificate upon retaking and passing a FOODSAFE Level 1 course.
4. Contact the district Environmental Health Officer for a follow up inspection; Correct within 1 month.
