302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Few of the wet wiping clothes were left on the sushi bar counter. A bucket of cloudy water was left by deep frying station, kitchen manager informed that it was used to wipe counters in this station.
Corrective Action(s): Please remind all staffs to return wet wiping clothes in 100ppm bleach sanitizer. Always mix 100ppm bleach sanitizer for immediate use and keep wet wiping clothes submerged.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) A few inserts in the kitchen prep coolers were left uncovered. 2) A couple of the scoops for bulk items were left inside the bulk food bins. Ice machine scoop left inside ice machine. 3) Miso soup toppings pre-portioned for take out containers and bowls are stacked so that the food come in contact with bottom of bowls.
Corrective Action(s): 1) Reminder to all staffs that food inserts should be covered after use. 2) Reminder to all staffs to store scoops outside of the bulk food bins and outside of ice machine. 3) Dispense toppings by order or lay out the bowls instead of double stacking them.

Observation: Fruit flies noted in the kitchen handwash station/dry storage area as well as rice room.
Corrective Action(s): Work on the sanitation in these areas to deter pest harbourage.

Observation: 1) Water and food spill under sushi bar handsinks. 2) Sauce and rice spillage in back dry storage room. Some sauce spillage in undercounter cooler.
Corrective Action(s): 1) Determine if there is leak under right handsink handsink. Remove the food debris and properly clean the floors and walls. 2) Remove food spillage right away, clean and sanitize the affected areas.

Observation: There were 48 seats accounted at the restaurant but restaurant was conditioned to remain at 40 seats only. Repeat.

1) Temperature records are not available for November, manager informed that they are remaking templates but all records up to Oct to date.
Please ensure to continue with checking and recording temperatures
2) Restaurant plans to change kitchen flooring extending into rice storage room. New shelving units may be added as well. Please provide details the plans for renovation work to ensure all requirements are met.
3) Sushi bar cooler door edge is being replaced and as such this cooler is temporarily not used. Please repair asap to allow for adequate storage.
