Observation (CORRECTED DURING INSPECTION): Staff not sanitizing utensils after use as Chemical supply company has not set up wall mount chemical sanitizer solution properly.
QUAT based sanitizer solution not at concentrations of 200ppm from dispensing unit.
CORRECTED DURING INSPECTION. Staff instructed to obtain bleach for chlorine sanitizing from local store. EHO and staff set up three compartment sink to be used for sanitizing.

Corrective Action(s): Sanitize all utensils and food contact surfaces at facility prior to operation for today. 1-2 minute soak. Follow directions on poster on wall.
Facility is not to use wall mount chemical sanitizer dispensing unit until such time as it can be inspected and repaired by Chemical supply company.
Ensure staff are instructed on how to set up three compartment sink for sanitizing of utensils and surfaces.
If facility is going to switch to chlorine sanitizer then chlorine test strips are to be obtained as facility only has QUAT testing strips

Comments

Facility MUST have methods of sanitizing at facility if it is to be in operation. If facility does not have means of sanitizing surfaces then it faces risk of closure. The only reason facility remains open today is that staff was willing to go out and obtain chemical sanitizer solution.
The sanitizer solution that is wall mounted has a new hose that has been installed and does reach third and second compartment sink. However today the concentration of QUAT sanitizer solution was 0ppm.

If owners wish to swap QUAT for Chlorine sanitizer solution this is an option as well and may be less complicated. Chlorine sanitizer solution is an alternative. Test strips will be required. Discuss with EHO. Business card provided.

NOTE: for a full sink of water the larger plastic disposable cup for Charcuterie Boards filled to the top with bleach (4oz bleach) is equivalent to 100-200 ppm Chlorine. Soak for 2 minutes and air dry.
