Comments

Routine inspection of the deli and the sandwhich prep area, including cheese and sandwich display.
Coolers are at temperatures <4C/ 40 F - good.
Hot holding of chicken - hot holding cabinet and self serve display unit area at 60 C/ 140 F or hotter.
Temperature records for coolers and hot holding are being kept. Charts show required temperatures.
Hot food is cooled in the walk in cooler (<<4 C).
Hand washing sinks in the sandwich prep area and the deli area have hot/cold water, liquid soap and paper towels, in dispensers.
Staff also wear non-latex disposable gloves.
Produce is pre-washed. Check this when ordering if not on the label.
Staff wear hair nets and uniform. Keep copies of Food Safe Level 1 certificate on site if not currently available..
Meat slicer is cleaned and sanitized every 2 hours. Follow directions on chemical label. Quats sanitizer measured using test strip - ok.
Regular sanitizer for wiping cloths is at above 200-400ppm. .
Commercial dishwasher has a hot water sanitizing final rinse. 160 F measured inside of the machine (check gauge to read 180 F for final rinse).
Pest control monitoring in place.
