New fans purchased. Still flies coming in. One fan turned off, the other was turned to swing motion. Keep both pointed to window. Bleach solution in sink at 100 ppm. Make sure to use two sinks for dishwashing. Better organized. Hot holding above 60 C. cooling units less than 4 C. Off season plans to improve food facility operations. New triple sinks to be installed.
