Observation (CORRECTED DURING INSPECTION): Raw items, seafood and fish is thawing in containers on same cutting board as raw veggies and cutting board.
Kitchen is very messy today.
There is various food items out at room temperature.
There is no space left on cutting boards for cutting or preparation.
Food prep areas are very messy and cluttered.
There are spilled powders, liquids and other items on prep tables.
Dark stained cloths are in various places on cutting boards, not in sanitizer.
Corrective Action(s): Organize and clean up before preparing food today for supper.
Other option is to close and clean up.
Operator cleaned and has helper to clean.

Items include cut veggies, cheese, mixed salads/salsa and various other potentially hazardous foods, cream cheese.

Lamb box sitting out at room temperature.
Corrective Action(s): Place all items in cooler.
Close lid when not in use.
Inventory items before dinner time.
If any items are >4C or left from lunch, discard.

Operator has plans to move sink and get new cooler or reorganize prep space. Please submit written plans.
