- Meanwhile use sanitizer solution from two compartment sink dispenser

- fresh produce in boxes is stored above finished, ready to serve items
Corrective Action(s): - Organize the walk-in cooler, store eggs, raw meats away from ready to eat items
- Store cardboard boxes away from finished food items

Handsinks in back kitchen and dishwashing area are supplied with hot and cold running water, soap.
- All coolers- walkin cooler, two upright cooler, prep cooler- are measured at less than 4C
- All freezers - walk-in, upright storage and ice cream are functional and maintained at less than -18C
- Hot holding units not in use at the time of inspection
- High temperature dishwasher is measured at 71C during final rinse at the dish surface
- Sanitizer solution at two compartment sink dispenser is measured at 200ppm quats solution
- No evidence of pest activity is noted at the time of inspection
