Observation (CORRECTED DURING INSPECTION): Observation 1): Food inside preparation cooler (top inserts) was at 15C. Operator informed that the inserts were re-filled in the morning at 7am (>7 hrs ago).
Correction: Discard all food stored in the cooler. Operator discarded food at the time of inspection (chopped vegetables, deli, cream sauces)
Rationale: Potentially hazardous food must be stored at <4C or maximum for 2 hrs at room temp. to prevent an overgrowth of microorganisms that can cause a foodborne illness.

Observation: Observation: 1) Deli slicer was not in good sanitary condition. Meat debris was noted around the blades.
Correction: Operator disassembled the deli slicer to thoroughly clean the piece of equipment at the time of inspection

Correction: Wipe down all handles and ensure adequate sanitation.

Observation: 3) Ice machine was very dirty. Food debris was visible along the walls of the chamber.
Correction: Empty out the machine and properly wash and sanitize the chamber as well as the water tray.
Rationale: Adequately sanitized equipment ensures that food is not contaminated through contact. Inadequate sanitation allows pathogens to overgrow and cause a foodborne illness through cross-contamination.

Observation (CORRECTED DURING INSPECTION): Observation: 1) Handsink at the front was blocked off by a sanitizer bucket inside - which the server confirmed was where they kept it always.
Correction: Remove the bucket. Ensure the handwashing is always available for use. Operator corrected.
Observation: 2) Handsink in the back (prep sink) did not have paper towels in the dispenser.
Correction: Operator refilled the dispenser. Ensure all handsinks are adequately equipped at all times.
Rationale: Adequately equipped handsinks encourage frequent handwashing which ensures food safety by preventing cross-contamination.

Observation: Observation: Bags of frozen food was stored on the floor of the walk-in freezer.
Correction: Operator re-located the food items. Ensure food is not stored on the ground.
Rationale: Ground is a potentially contaminated surface that can contaminate food. It can also encourage pest activity.

Observation: Observation: A bag of frozen strawberries was noted thawing at room temperature. The berries were still frozen.
Correction: Operator re-located the berries to the cooler. Ensure the frozen food is thawed properly in a cooler or under running cold water.
Rationale: Thawing food at room temperature allows pathogens to grow at the surface of the food as it warms up.

Observation: Observation: The floors and shelves of the facility require a deep clean as the ground is slippery and surfaces are grimy with grease.
Correction: Perform a deep clean of the facility.
Rationale: Grease guild-up on floors is a slip and fall hazard and can also attract pests. Dirty surfaces can cross contaminate food and food contact surfaces.
