Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. No sanitizer available for food contact surfaces.
Only sanitizer available is to be used for disinfection purposes on non-food contact surfaces. These bottles were stored at janitor slop sink.

2. 2 comp sink dishwashing being conducted - sanitizer solution is 300-350 ppm QUATS. 2 comp sink dishwashing instructions above dishwashing area states: "200 ppm - solution is OK". "300-400 ppm - solution is too strong". QUATS test strips available.

3. No plugs available for 2 comp dishwashing sink - plastic scooper used as plug
Correction: 1. Ensure sanitizer is available for sanitizing food contact surfaces at 200 ppm QUATS and or 100 ppm chlorine in labelled container.
2. Ensure staff follow own manual dishwashing practices: 1. Wash 2. Rinse 3. Sanitize (200ppm QUATS) 4. Air Dry
3. Ensure dishwashing sink has proper plugs designed for that specific sink available. Must have at least 1 plug per compartment (2 minimum).

-100 ppm chlorine sanitizer in labeled spray bottle (food contact surfaces) available at centre of unit
*Using QUATS test strips to check for chlorine levels - No proper test strips available
-400+ ppm QUATS sanitizer in labelled spray bottle (non-food contact surfaces)
-New thermometer available in freezer
- 2 comp sink manual dishwashing - sanitizer solution noted at 400 ppm QUATS
*Issue is half the number of water for 2 pumps of concentrate QUATS being pumped into compartment.
*Ensure water level is at proper level indicated on front of sink compartment for sanitizing before pumping QUATS concentrate into compartment.
*Once sanitizer solution is made it must be tested with QUATS test strips at 200 ppm reading.
*Review dishwashing practice with staff

Required correction:
1. Dishwashing plugs (2)
2. Chlorine test strips if chlorine sanitizer still being used.
3. Mechanical dishwasher to be repaired
