302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Mechanical dishware washer has been removed from the kitchen. 3-compartment sink is observed to be small and not adequate to accommodate dishware. Also, proper procedure of sanitizing food trays and other dishware can not be completed properly. Corrective Action(s): Re-install the mechanical dishwasher. Ensure sanitizing step in the final rinse meet industry required standards. If the new install is different than the previous unit, call your health inspector to confirm. Date to be corrected by: Immediately For High-temp dishwasher units final rinse water temperature must reach 71C at the dish surface. For Low-Temp dishwasher units sanitizing chemical in final rinse must reach adequate level according to the manufacturer's specification. Violation Score: 25
