Observation (CORRECTED DURING INSPECTION):
Observation #1: Wet wiping cloths found lying on kitchen surfaces. Staff observed using wiping cloths without sanitizer. Wiping cloths must be soaked in sanitizer solution when they are not in-use. Sanitizer will destroy any pathogens present on the cloths. Sanitizer solution must be changed every 2 hours. Made up a solution of sanitizer with staff and placed all wiping cloths inside.
Observation #2: Sanitizer spray for customer tables had 0 ppm chlorine bleach. A concentration of 100 ppm chlorine bleach is required for sanitizing food contact surfaces = 1/2 teaspoon of bleach in 1 L of water. Mixed up the required concentration of bleach. Bleach solution in spray bottle to be changed once a week.

Observation: Operator could not find their chlorine and quats test strips during the inspection. Chlorine test strips are required to record the correct concentration of bleach sanitizer (100 ppm) and quats test strips are required to record the correct concentration of quats sanitizer (200 ppm) at the dispenser. If the dispenser is not outputting 200 ppm quats, it must be serviced by a professional. [Date to be corrected by: December 14, 2018]
