Comments

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were washing their hands properly at the time of inspection.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Walk-in-freezer and other freezer were at or below -18 degrees C.
Hot-held food (chicken, mashed potatoes and rice) were at or above 60 degrees C.
Chicken is sliced prior to cooling it.
Food is cooled in shallow metal containers inside the walk-in-cooler.
Chicken and rice undergoing the cooling process was within the critical limit for cooling: cooling food rapidly from 60 to 20 degrees C internal food temperature within 2 hours and 20 to 4 degrees C within 4 hours.
Probe thermometer was in good working order.
Cooking temperatures from the corporate food safety plan were available on-site for staff reference.
Temperature records were being maintained on-site.
Food storage areas were clean and organized.
Staff with valid FOODSAFE Level 1 course training were present on shift.
200 ppm QUATS sanitizer was available inside a labelled spray bottle and three sanitizer pails.
Low temperature dishwasher final rinse chlorine sanitizer residual was at least 50 ppm at the plate level (measured at 100 ppm at the time of inspection).
2-compartment sink and overhead sprayer were operational. Note: One drain plug was available and the second drain plug is in order according to staff.
Prep. sink was operational.
Chlorine test strips and QUATS test strips were available on-site.
Pest control program was in place on a twice per month basis.
Ice machine was empty and not in use for ice storage.
Ventilation hood panels appeared in a clean condition at the time of inspection.
