Contact our billing department ASAP. Violation Score: 1 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Final rinse pressure gauge on the high temperature dishwasher observed showing approx 10psi on final rinse. Optimum pressure on final rinse as per manufacturers plate is about 20psi. Corrective Action(s): Since the dishwasher was tested at 74c (A plate level) the gauge itself is not accurately reflecting the final rinse pressure and may require repair or replacement. Violation Score: 3

*Staff need to be aware that the door to the walk in cooler must be physically closed when exiting. High temperature Dishwasher final rinse at 74c (At plate level) Damaged floor tiles replaced in front of fryer unit Walk in cooler at <4c. Food items covered and dated Walk in freezer at <-18c All hot holding units hot holding product at >60c Quat sanitizer at 200ppm. Wiping cloth's stored in sanitizer when not in use .
