Observation (CORRECTED DURING INSPECTION):
Pot of soup found to be cooling beside back door. Operator informed that soup was cooling for 20-30 minutes.
Corrective Action(s):
Place pot into walk-in cooler to cool at 4 degrees Celsius. Foods are to be cooled properly in the following manner:
- From 60 degrees Celsius to 20 degrees Celsius within 2 hours (use ice water bath, cooling wand, or separate into smaller portions and in shallow pans), then
- From 20 degrees Celsius to 4 degrees Celsius within next 4 hours (in cooler at 4 degrees Celsius).

Observation:
Mesh for screen door has become loose from two sides on the bottom section.
Corrective Action(s):
Repair/replace mesh for screen door to ensure it is secure to prevent any potential entrance of pests. To be corrected by August 2, 2017.

Observation:
General sanitation of premises needs improvement, especially in the following areas:
- Underneath dishwashing sinks and dishwasher
- Underneath shelves of dry storage area
- Corners between floor and wall throughout premises
- Underneath equipment and cooking area
- Behind chest freezer
Corrective Action(s):
Clean all areas listed above. Ensure you are following your sanitation plan for daily, weekly, monthly and seasonal cleaning, including hard to reach areas. To be corrected starting today.

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding (miso soup and all rice warmers) maintained above 60 degrees Celsius.
- Food stored in coolers and freezers were all covered with a food-grade cover - excellent work!
*Ensure to continue this so that all food items are covered and protected from contamination.
- Chlorine (bleach) sanitizer in spray bottle = 200 ppm.
- Low temperature dishwasher sanitizing with 100 ppm chlorine.
- Ice machine maintained in a sanitary condition. Ice scoop stored in designated container - good.
- Employee washroom hand sink fully equipped with liquid soap, paper towels and hot/cold running water.
- Pest control in place. Pest control company comes in monthly.
- No evidence of pest activity at the time of inspection.
