Routine inspection is conducted:
- Hand washing stations supplied with hot/cold running water, liquid soap and paper towel in dispenser.
- All coolers- line cooelrs, walk-in cooler, prep cooler measured at or below 4C.
- Freezer measured at or below -18C.
- Dishwasher measured dispensing 50ppm chlorine residual on the dish surface at the final rinse water cycle.
- Sous Vide processing taking place at the time of inspection. Timer available.Thermometer available. Adequate logs are maintained
- Sanitizer solution for food contact surfaces is available in spray bottle. DDBSA/Lactic acid concentration is measured within required limits
- General sanitation is satisfactory.
- Ice well in bar noted clean. ice scoop stored properly.
- Glass washer is measured at 12.5-25 ppm Iodine after final rinse.
- No evidence of pest activity is noted
- Food storage practices are satisfactory
