Observation (CORRECTED DURING INSPECTION): Raw packaged chicken wings store above ready to eat foods (ex. ham and pepporoni) inthe walk in cooler. Best practice is to store RTE foods abovce raw meats. Ensure all raw meats are stored below RTE foods to prevent direct contamination.

Observation: Bottle sanitizers at the front counter and kitchen area are not labelled. The bucket used to keep sanitizer also not labelled. Unlabelled bottles and buckets have labels indicating the sanitizer it contains.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: line coolers lacked therometer inside the unit to monitor temperature. Thermometers are required inside all cooler units to monitor the refridgeration temperature at any given time. Ensure thermometers are present in all refridgeration units.

Gen- All handwashing stations are equipped with hot/cold water, soap and paper towel (one hand sink located at FOH, 2 at BOH)
- Stand up cooler, walk in cooler and line coolers are all </= 4C (3.4C, 3.7C, 3.9C)
- Stand up freezer @ </=-18C
- Sanitizer bottles available containing >200ppm of chlorine residual
- 3 compartment sink available for manual dishwashing, bleach available on site.
