Cardboard tuck taped to the top of deep freezer. Remove remaining worn silicon around handsink and refinish. Light cover missing on bulbs in sushi area. Corrective Action(s): Tuck tape is not to be used as bacteria can harbour along the tape. All surfaces are to be smooth and cleanable. Please address. Replace missing light cover. Repair or replace shelves. Violation Score: 3

All fridges are maintaining foods at 4 degrees C. or colder. All freezers are -18 degrees C. or colder. Miso and rice are being hot held at 60 degrees C. or hotter. Shelves in walk in cooler require cleaning. Move fly strips to an area where food is not stored below them. Dishwasher final rinse reached 72 degrees C. at plate surface.
