301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Rotating vegetable slicer was observed with vegetable debris on slicing surfaces. It was stated that vegetable slicer was last used in the morning (greater than four hours ago).
Corrective Action(s): Vegetable slicer was washed, rinsed, and sanitized at time of inspection. Ensure that all equipment/utensils/food contact surfaces are properly cleaned and sanitized following each use. Residual food debris may potentially contaminate food items and may attract pest activity.

209 - Food not protected from contamination [s. 12(a)]
Observation: The following was observed:
1. Bleach water sanitizer within labeled spray bottle was tested at greater than 200 ppm chlorine (test strip turned from purple colour to white).
2. Several food items located within the walk in cooler were uncovered.
Corrective Action(s): 1. Bleach water sanitizer was diluted to 100 to 200 ppm chlorine. Ensure that sanitizer is prepared at concentrations required for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine). High sanitizer concentrations may allow for residual sanitizer to remain on surfaces and cause potential chemical contamination of food. A manual warewashing poster with instructions for the preparation of bleach water sanitizer was provided at the time of inspection.
2. Ensure that all food items are properly covered. Dust and other debris may fall into and contaminate uncovered food. Date to be corrected by: Today.

Observation: Food debris, dust, and/or grease observed in the following areas:
1. Interior of shelving units ( bottom surfaces and interior sides of shelving)
2. Interior of preparation cooler
3. Fan covers and wire shelving located within the walk in cooler
Corrective Action(s): Ensure that all above-noted areas are properly cleaned and sanitized. Food debris, dust, and/or grease may potentially attract pest activity and may potentially contaminate food and/or food contact surfaces. Date to be corrected by: January 11, 2019.

Observation: The following was observed:
1. Several shelves in the dry storage area were lined with soiled cardboard.
2. One shelf located on the far right side of the main dry storage shelving area was rough, unsealed wood. Food debis and oil had adhered to the surface of the unsealed wood.
Corrective Action(s): Ensure that shelving surfaces are smooth, non-absorbent, and easy to clean. Ensure that any unsealed wood is properly sealed to fulfill these requirements, or provide a new shelf that meets these requirements. Date to be corrected by: January 11, 2018.

Observation: No staff on site at the time of inspection held FOODSAFE Level 1 or its equivalent.
Corrective Action(s): Ensure that at all times, at least one staff member on duty in the operator's absence holds a certificate for the successful completion of FOODSAFE Level 1 or its equivalent. Have additional staff trained as necesary to meet this requirement. Note: It was stated that operator would be arriving later today. Date to be corrected by: Today.

Routine inspection conducted:

- Walk in cooler at 1 degree C
- Prep cooler at 3 to 4 degrees C (top inserts) and 1 degree C (below)
- Small chest freezer at -18 degrees C
- Large chest freezer at -17 degrees C
- Front glass beverage cooler for storage of non-potentially hazardous beverages (soft drinks)
- No hot holding
- Thermometers available for cold holding units
- Discussed manual ware washing procedures with staff on site--no concerns. Bleach available for manual ware washing.
- Discussed cooling procedures. It was stated that beef sauce allowed to cool in a large shallow pan in the cooler. Once cooled, beef sauce is transferred to large volume buckets for storage. Cooled items were probed at an internal temperature of 4 degrees C or less.
- Hand washing sink is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No signs of pest activity observed
