Observation: The only cooler in the front service area is at 8 degC. There were 2 cartons of eggs in this cooler, water and pop. It appears to be in defrost mode.
Corrective Action(s): The eggs were relocated to the staff cooler in the back of the store. Check the temperature of the cooler after an hour and if it hasn't dropped down to 4 degC or below, get it serviced. Do not store any PHF's in this cooler until then.

Observation: Cold foods are still being placed in the hotholding unit for reheating even after a few warnings. Foods in the warmer ranged from 25-47 degC.
Correction: Discard all the foods.

Observation: There is no stove onsite. The microwave onsite is not being used for reheating foods.
Correction: Cooking/reheating equipment required as discussed. Renovations will be required if you'd like to continue selling hot foods. Submit a floor plan for approval if you decide to go this route.

Staff fridge is at 4 degC; freezer is at -18 degC
Both chest freezers in the back room are at or below -18 degC; 2-door upright freezer temperature is -19 degC
Only foods from approved sources, with proper labels are being stored on-site.
200ppm bleach is onsite; handsink in the kitchen is fully equipped. PROVIDE SOAP IN A DISPENSER AS DISCUSSED.
Operator has FS level 1 certification (Expiry April 15, 2024)
Operator is trying to sell the hotholding unit and countertop warmer. These are not to be used at all for any reason.
Operator is approved to operate her business as a food store with minimal food service. The only food service will be providing hot water from a kettle for "cup of noodle" soups and instant coffee (that doesn't require the addition of milk). If you'd like to add more foods to your menu, you MUST get approval first.
