Observation (CORRECTED DURING INSPECTION): Ensure that tongs and spoons for all sauces are being stored in the foods in the warmer and not at room temperature in a container of water to prevent growth of bacteria.
Corrective Action(s): Operator placed utensils in each food item to store them above 60 degrees Celsius.

Comments

All fridges are maintaining foods at 4 degrees Celsius or colder.
Walk in freezer is -20 degrees Celsius.
Hot holding of soups and sauces were found to be 60 degrees Celsius or hotter.
Sanitizer in spray bottle measured 200 PPM Quat residual. Sink was filled and measured 200 PPM quat residual.
Soap and paper towel at handsink. Note: Operator has paper towel sitting adjacent to handsink until a replacement key is delivered to unlock dispenser.
Operator to have a grease interceptor installed in floor under sink. Ensure that it is done when premises is not in operation and all food items are covered and protected from dust and debris. Control for dust prior to commencing work.
