Note: Prep. cooler front of the cooking line bit high. Ensure the temperature of the cooler at 4.0 C or below. A thermometer ha to be available in a cooler.
Keep the temperature log; and if it is required - repair or service the cooler. (Note: The inspection is conducted at the busy lunch time.)
