Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: At the time of inspection operated stated the high temperature dishwasher is not in good working order. Dishwasher unable to reach minimum temperature of 71 degrees C at the plate surface during the final rinse cycle. No drain plugs available for the drains at the 3 compartment sink.
Correction: At this time premise continues to operate as a take out/delivery business only. Operator to immediately obtain 3 drain plugs for the 3 compartment sink for manual warewashing. All dishes, utensils, equipment to be washed, rinse, then sanitized in 100ppm bleach for 2 minutes then air dryed. Followup inspection January 17, 2023.

Operator has purchased and has onsite available for use drain plugs for the 3 compartment sink. Manual ware washing placard in place. 3 compartment sink setup for manual warewashing.
Chest freezer temperature setting adjusted. Ambient air temperature at -25 degrees C.
