Observation (CORRECTED DURING INSPECTION): One of the reach-in prep coolers was noted with an ambient temperature of 10.0C - 11.0C. Internal temperatures of food were measured and the tomato sauce was noted at 8.6C and cooked chicken wings were noted at 8.7C.
Corrective Action(s): All cold potentially hazardous food including soft cheese, tomato sauce, cooked chicken wings, chopped lettuce and garden salad were discarded.

Observation (CORRECTED DURING INSPECTION): < 100 PPM QUAT detected in the sanitizer container holding in-use wiping cloths..
Corrective Action(s): Operator added more QUAT to the sanitizer container. 400 PPM QUAT was detected after additional sanitizer solution was added.
Discussed about the frequency for changing out the sanitizer solution. Please change out every 2 - 4 hours or when noted to be overly soiled as the sanitizer concentration will decrease over time and with organic debris noted in the solution.

Observation: Missing light shield on one of the fixtures in the back prep area.
Corrective Action(s): Operator will be purchasing individual light bulb sleeves for the fixture.

Observation: One of the reach-in prep coolers was noted with an ambient temperature of 10.0C - 11.0C. Operator noted that the temperature setting for this unit was set too hight.
Corrective Action(s): Operator discarded all the cold potentially hazardous food in this unit. This cooler was emptied during the inspection. Temperature was readjusted. Operator will monitor the ambient temperature of this unit, if the unit is able to reach 4.0C within a couple hours, operator may return food into this unit for storage. If after a couple hours and the unit still cannot reach 4.0C or below, please service this cooler.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
Most refrigeration units (except for unit noted in violation above) were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected and in the proper storage hierarchy.
Bar high temperature dish machine was able to reach 75.6C at the plate level. Note: Main kitchen dish machine had draining issue and will require to be fixed. Use the bar dish machine for the time being.
No signs of pest activities noted during the inspection.
Overall sanitation and organization acceptable.
Operator has a valid FOODSAFE level 1 certificate - expires Sep 2028.
