* Dishwasher final rinse was 50 ppm chlorine residual after several full cycles; ensure proper sanitizing rinse cycle concentration maintained and checked daily
* Cold-holding units were 4'C/40'F or colder
* Freezer was -18'C or colder
* Monitoring records were available
* Hand washing stations to have adequate soap and paper towels available at all times; operator had to fill one paper towels dispenser as it was empty
* Food was covered in storage; ensure food containers proper condition and suitable for food storage
* Note: some cleaning and organization in storage areas required; remove all items/equipment not currently used for business
* Note: staff to wear proper attire (sleeves not to hand down into food while handling food)
* Sanitizer was available and at 200 ppm chlorine residual in buckets to store wiping rags
* Note: replace missing light cover
