203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Containers of beef stew not properly cooled. Internal temperature of food products was between 10C to 13C. Operator is to cool food products is shallow metal pans and not in tight fitting plastic containers until the food product reaches an internal temperature of 4C. All foods must cool from 60C to 20C in 2 hours, then 20C to 4C in 4 hours.

209 - Food not protected from contamination [s. 12(a)]
Observation: Pooling of eggs is for different stir fried products. Pooling of eggs increases the chance of Salmonella contamination of different foods. All raw cracked eggs must be cooked for 1 order of food and not for multiple food products.
Tray of partially cooked chicken and tofu were placed on top of a garbage can, which was used as an additional food counter. Do not use garbage can as addition food counter space.

304 - Premises not free of pests [s. 26(a)]
Observation: Rat droppings noted in the dry storage area on the second floor. Operator acknowledged that a rat was caught during the morning hours. No evidence of rat droppings noted in the kitchen area. Low level of cockroach activity noted in the dry storage area as well. Operator has a monthly contract with a pest control company. Operator is to maintain an on going contract with pest control company to eliminate all pest problems. Pest reports/records must be maintained on-site.

Observation: General clean is maintained for the general area. However, more thorough cleaning is needed for hard to reach areas such as behind equipment, underneath shelving units, and dishwasher area to help eliminate pest problem.
Exhaust canopy also needs to be cleaned.

Routine inspection conducted and the following were noted:
Chlorine dishwasher achieved a final rinse concentration of 100ppm.
Wiping rags stored in a containers of 100ppm chlorine solution in the front retail and kitchen area.
Hand washing stations satisfactory.
All cooler units at 4C.
Hot holding of food products at least 60C internally.
Temperature for freezer units between -12C to -18C.
Food items stored at least 6 inches off the ground along with equipment kept 6 inches away from walls to monitor pest problem.
